My wonderful husband bought me the KitchenAid spiralizer attachment for Christmas! So I had to take it out for a test drive. I’ve seen numerous people making zucchini noodles on various shows and they looked great, so I decided to make that my first endeavor. They did not disappoint! The have an understated flavor and great texture that made for a wonderful dinner. The dish was delicious and satisfying, but it left me feeling good and not uncomfortably full like so many other meals do.

I wasn’t in the mood to go completely vegetarian, so I added turkey sausage and turkey bacon, but this could have also been a tasty vegan main or side dish.

The spiralizer itself, was impressively easy and quick to use. And the best part? The clean up was super easy!!! The food doesn’t even touch the largest part of the attachment, so that stayed clean. The two parts that did touch the food are top rack, dishwasher safe. I actually found they cleaned off very easily just by running them under water in the sink. So often the attachments are so much work to put on, take off and clean that it’s not worth the time saved with the food prep, but this wasn’t the case here. These KitchenAid attachments are not cheap, so look for a sale and get our your coupons! The other option is there are numerous other types of less expensive spiralizers available, so look around. I’ve seen some reviews online, so that might be a good place to start. Next, I’m looking forward to making baked, sweet potato curly fries!

My recipe for the zucchini noodles with turkey is below… 

Zucchini Noodles with Turkey

4 zucchini, make noodles using smallest KitchenAid spiralizer blade

1 1/2 cups grape tomatoes, haved

6 slices turkey bacon, diced

3 Italian turkey sausage links

1/4 cup Parmesan cheese, grated

1 tbsp olive oil

2 cloves garlic

1 tbsp balsamic vinegar

1/4 cup white wine

Lightly grease or spray a frying pan and brown turkey sausage. It’s OK if they’re not cooked all the way through. Slice sausage into bite size pieces. Cook turkey bacon in same pan while slicing sausage. Add olive oil and sauté garlic. Add zucchini noodles and sauté for 2-3 minutes. Add tomatoes, cheese, vinegar, wine and cook for an additional 3-4 minutes while stirring. Add all turkey to pan and cook another couple of minutes until everything is warmed through. You want to your zucchini warmed through, but not over cooked. At least for me, I still wanted it firm and not soggy.

You can see by my picture that I decided to leave the skin on the zucchini and I liked it this way. It added to the texture and kept the noodles firm. This particular spiralizer does have a peeling blade that can also be used. I just opted not to use it here.

Enjoy! We just served ours with a spinach salad, so it made for a very light,healthy meal.
