Hi! My name is Kelly and as the tagline says, “Love to eat, love to cook and trying to keep it healthy!”. Cooking has been my passion and form of artistic expression for years. I’ll admit, I’m no gourmet and I’m still learning many techniques, but I have gotten rave reviews on most of my food from friends and family. I also take pride in making low fat, healthy foods taste delicious and getting the pickiest of eaters to eat what is good for them! So without further delay, come join me on this food blogging journey! My plan is for us to discuss/share all things food related: recipes, favorite ingredients, cooking techniques, meal strategies, inspirations, restaurants, and even food shows and movies. Here we go…

  7. Kelly, here is my Mom’s recipe for Portuguese Calde Verde Soup. Feel free to share it if you like it…her name is Theo Borges.

    1 lb Portuguese linguicia sausage, cut into 1/4″ slices
    1 med-lg onion, chopped
    2-3 lg cloves garlic, minced
    2 1/2 qts chicken broth
    2 lbs potatoes, peeled and cut in 1/2″ pieces
    1 lb fresh kale cleaned stems removed, sliced into strips
    1 lb can cannolli beans, drained and rinsed
    Cheesecloth spice bag containing: 1 3″ stick cinnamon, broken into pieces, 1 bay leaf, 2 tsp whole allspice
    In a lg (about 6 qt) stockpot lightly brown sausage. remove from pan leaving drippings. Add onion and garlic, cook until onion is limp. Add broth and spice bag. Cover, bring up to a boil, turn heat to a simmer and cook for at least 45 minutes so flavors blend well. Add sausage, kale, beans, and potatoes. Cover again and bring back to a simmer. Simmer until potatoes are tender and kale is cooked, a little longer to intensify flavors as desired. Add salt and pepper to taste. Serve.

    I hope you like it, it’s a Portuguese tradional dish and a favorite in my Portuguese family! Jody
