Our family is not vegan, but once or twice a week we try and go meat-free. This looks like a hearty and tasty meat-free meal. And bonus!!! You get everything all in one meal, so you don’t have to make extra side dishes! Love it!

My lovely daughter recently started a YouTube channel with a focus on beauty and fashion. I just wanted to give her a shout out and encourage any of my blog friends that are interested to check out her website. She only uses products from companies that practice cruelty-free production. Of course, I’m biased and think she’s great, but she really is a whiz with make-up and has always been a fashionista. She recently graduated from the Fashion Institute and Design and Merchandising. And she’s always good for a laugh too, so I think you’ll really enjoy her videos.

Southwestern Stuffed Spaghetti Squash – A Delicious and Beautiful Vegetarian Entree

I know I shared a link to this recipe a while back, but last night I actually made it myself. Now I can truly attest to how delicious this dish is!!! If you love southwestern flavors and would like a vegetarian (even vegan) entree, this is for you! The mild flavor of the spaghetti squash is jazzed up with black beans, red bell pepper, onion, and jalapeño. I wasn’t shy with the jalapeño, so my dish had a little kick to it! And the lime juice and cilantro add tang and freshness to the wealth of flavor here. This dish is very healthy, but never fear it’s a hearty one too!

While this dish does take some time to bake the squash (about 45 minutes), the preparation is pretty simple. The results are very impressive though. Put on a beautiful platter, this would be a great dish to serve to guests. And if you leave off the cheese, it easily becomes a delicious vegan dish. I love cheese, but this dish would be just as good without it.

To shorten the cook time a bit, I did not cook the squash whole. I cut it in half lengthwise and baked in a pan line with foil for 45 minutes. I also cleaned out the seeds prior to baking. I also added sliced black olives to mine. If you don’t like spicy, you could easily substitute diced green chilies for the jalapeño.

Here in the U.S. we know aubergine as eggplant. The dip of eggplant and spicy harissa sounds wonderful!!! A must try!

Who knew cauliflower was so versatile? I didn’t until the last year or so! You can get the pickiest of eaters to gobble this vegetable down by disguising it like this recipe does or as fried rice or cous cous as I have shared in previous recipes. I’m dying to try this one!

In November Julia and I went with friends to one of my favorite neighborhood restaurants, and had one of the best appetizers ever – buffalo cauliflower. I am normally not a huge cauliflower fan – I like it just fine, but it’s never anything I think about making or ordering. This cauliflower was fantastic, and it seemed like it had to be easy to make so I set out to do just that.

In the midst of college football bowl games whip this easy appetizer or side dish up and everyone will love it without the guilt of wings.


Buffalo Cauliflower

(Serves 2-4)

Ingredients:

1 head cauliflower, chopped into florets

1 Tbs. canola oil

1/3 c. Frank’s Red Hot

1 Tbs. butter or Earth Balance

1 Tbs. blue cheese crumbles

Salt and pepper

Directions:

Preheat oven to 400

Toss cauliflower with 1 Tbs. Canola oil

Pico de Gallo Spaghetti

 I’m reblogging this post by someone else as it sounds DELISH! My niece recently posted a picture of her toddler eating salsa with a spoon when out to eat at a Mexican restaurant. He is obviously related to us! My brother-in-law has cautioned people about sitting too close to my sister and I when eating salsa as they might experience a tomato rash from the salsa splashing as we shovel it into our faces. We LOVE salsa!!! That’s why I thought this pasta was perfect for us. I can’t wait to try it!
