Buffalo Cauliflower

Who knew cauliflower was so versatile? I didn’t until the last year or so! You can get the pickiest of eaters to gobble this vegetable down by disguising it like this recipe does or as fried rice or cous cous as I have shared in previous recipes. I’m dying to try this one!

In November Julia and I went with friends to one of my favorite neighborhood restaurants, and had one of the best appetizers ever – buffalo cauliflower. I am normally not a huge cauliflower fan – I like it just fine, but it’s never anything I think about making or ordering. This cauliflower was fantastic, and it seemed like it had to be easy to make so I set out to do just that.

In the midst of college football bowl games whip this easy appetizer or side dish up and everyone will love it without the guilt of wings.


Buffalo Cauliflower

(Serves 2-4)

Ingredients:

1 head cauliflower, chopped into florets

1 Tbs. canola oil

1/3 c. Frank’s Red Hot

1 Tbs. butter or Earth Balance

1 Tbs. blue cheese crumbles

Salt and pepper

Cauliflower Fried Rice: Sneaking Vegetables to Your Family!

When I originally started this blog, one of my promises was tips on how to sneak vegetables to your picky eaters. The dinner I made the other night is an excellent example of how to do this. Does your family like Chinese food? If so, they will likely enjoy this recipe for Cauliflower Fried Rice. And there is absolutely no “rice” in this recipe!
I have a previous blog post about the joys of cauliflower, but I thought I would share this specific recipe with you as it was especially good!

Cauliflower Fried Rice

2 cups Frozen Peas

1 cup water

2 tbsp Sesame Chili Oil (or regular Sesame Oil, but I like the extra heat)

4 cups Boneless, Skinless Chicken (or Pork Loin), cubed

6 Green Onions, Sliced

1 Large Carrot, Diced

2 Cloves of Garlic, Chopped or Pressed

1 Head of Cauliflower, cut up into florets and pulsed in food processor until it reaches a rice-like consistency. Don’t over do it!

1/3 cup Low Sodium Soy Sauce

2 Eggs, Beaten

• Stir peas and water together in saucepan. Bring to a boil and the reduce heat to medium-low and cook until peas are tender, about 5 minutes. Drain peas.

• Heat Sesame Oil in a frying pan or wok over medium-high heat. Add chicken, stirring until lightly browned on all sides, about 5 minutes. Transfer meat to a plate.

• Add green onions, carrot and garlic to the frying pan/wok. Saute vegetables until softened, for about 5 minutes. Add cauliflower and cook for an additional 4-5 minutes, stirring occasionally.

• Stir peas, chicken and soy sauce into pan. Stir fry mixture until slightly brown and fluid is absorbed, about 3-5 minutes.

• Push mixture in pan out to edges, creating a whole in the middle. Pour in eggs and scramble. Once eggs are cooked, stir entire mixture in pan together making sure to break up any large egg chunks.

This recipe made plenty for our family of 3 to have only this as a main dish. Grab your chop sticks and enjoy!!!

Cauliflower pizza

I have made mashed cauliflower and cauliflower cous cous, both of which my family loved. I’ve heard cauliflower pizza crust is good. Will have to give it a try! Goes with my goal of healthier eating and sneaking those veggies in!

I took a slight hiatus during which time school completely exploded. The year’s over in two days, though, so here’s to a summer of travel and trying to get into college and cooking.

For right now, though? CAULI-FREAKING-FLOWER PIZZA.

This pizza is my new religion. I swear, if I had cauliflower on hand all the time, I’d make this once a day.

I used this recipe from Umami Holiday. Basically, if you’ve got cauliflower, cheese, and an egg, you’ve got creative license to do whatever the hell you want to your pizza – my kind of food.

You’re going to start by grinding your cauliflower in a food processor, ideally.

I wasn’t sure how fine to go, so I processed the crap out of that cauliflower. The consistency worked out for me, though, so I’d aim for something like this.
