Dill Pickle Popcorn – A Yummy Snack!!!

So my daughter LOVES dill pickles!!! I even bought her a box of pickle juice pops for Christmas one year. LOL! She and her husband were hosting the Super Bowl party and I decided to try my hand at making dill pickle popcorn to bring. Everyone loved it!!!! We had two separate viewing rooms and people kept stealing the bowl back and forth, so I think it was a hit!!! If you like salt and vinegar chips, you will love this flavor profile.

Dill Pickle Popcorn

  • 1 tablespoon ground coriander
  • 1 tablespoon kosher salt
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon citric acid (I bought this online through Amazon. This gives you the sour vinegar taste!)
  • 1 1/2 teaspoon dried dill
  • 1 1/2 – 2 cups crushed Lays Dill Pickle potato chips
  • 5 quarts of buttered popcorn

Mix together all the seasonings in a small bowl. Then in a large bowl mix popcorn, potato chips and seasoning mix. Enjoy!!!

BBQ Pork and Beans – A Delicious Game Day Entree!

Since Super Bowl is next Sunday, I thought I would make something that others might enjoy as a game day dish. I had purchased some pork stew meat on sale and I had a bag of pinto beans, so pork and beans it is! Of course, I couldn’t resist the lure of BBQ flavor, so I included some BBQ sauce in the beans and boy that combined with a dash of liquid smoke, gave these beans a wonderful flavor! Not to mention, my house smelled wonderful all day while they were cooking! This is something a little different from the game day chili that is so popular, but it was just as delicious!

We enjoyed these beans as a main dish with a slice of bread. I happened to have some spicy chow chow in the fridge, so that is the relish you see in the photo. It added a nice, tart zip to the beans.

BBQ Pork and Beans

1 pound of dried pinto beans

8 cups water

1 cup chicken broth

1 medium red onion, chopped

1 pound cubed pork stew meat

1 1/2 cups barbecue sauce

1/4 cup brown sugar

1-2 tsp hot sauce

Dash of liquid smoke

Salt and pepper

I didn’t soak my beans overnight, so I did the quick soak method. I put the dried beans in a large pot with 8 cups of water. I brought the pot to a boil and let it boil for 3-4 minutes. Then I turned off the heat and let them sit for about 20 minutes to cool down just a bit. I then transferred the beans with about 3 cups of the water they cooked in, into my slow cooker. I added all the other ingredients, gave it a good stir and cooked it on high for about 8 hours. The beans really need that high setting to cook through.

What’s Cooking on Super Sunday???

So what is everyone cooking for Super Sunday? I’m curious to hear. My husband and I are hanging out at home and a girlfriend of mine is coming over. Since there is just going to be a couple of us I’m not making too much, but being the food lover that I am and I adore appetizers, I can’t pass up the opportunity to make a few things.

I’ll be making gumbo based on a post I shared a few days ago and my girlfriend is bringing cornbread. Yum!

I’m also making a 7-layer dip. Gosh I love this stuff! What are my layers you ask? Everyone’s are a little different

  • Fat Free Refried Beans
  • Guacamole
  • Fat Free Sour Cream Mixed with Taco Seasoning Mix – The taco seasoning is a must! It adds that extra flavor boost.
  • Salsa
  • Shredded Reduced Fat Cheddar Cheese
  • Diced Green Onions
  • Sliced Black Olives

The munchies wouldn’t be complete without another of my favorites, Buffalo Wings!

Oh, I almost forgot! My girlfriend is also bringing a cheese and beer concoction known as “crack dip”. Can’t wait to try that! 

And then for dessert, my daughter is making double chocolate brownies with a swirl of Nutella baked in.

That should keep us fat and happy tomorrow!
